|I recommend you prep your ingredients and then DUMP in a nice bowl|
1 cup quinoa (follow box directions for cooking, I use my rice steamer for less cooking drama)
1 1/2 cup of water ( to cook quinoa, I used about 1 3/4 cup in my rice steamer)
salt to taste
1 cup of corn (but I did a can)
3/4 pound large shrimp ( I prefer the cooked kind =less work) omit if you are a shrimp hater!
1 can of black beans rinsed and drained
2 large peaches chopped ( I used canned peaches bc my store was out of fresh, leave juice out)
2 tomatoes, coarsely chopped
2 celery stalks, chopped
1/4 cup fresh cilantro
Lemon juice to taste (my taste is mucho lemon juice!)
2 teaspoons extra virgin olive oil
pinch of cayenne ( I used Cholula hot sauce and was super generous with my bowl)
You know by now that sealaura dishes mostly involve dumping a bunch of ingredients into a bowl or a pot and sayonara! And this is a perfect recipe that involves just that. I served it chilled and it was a hit, granted I only have one customer at my dinner table but hey, he ate it and had seconds and thirds (I know, portion control!)! By the way I am one toe deep in to my first Texan Summer and it is HOT so more salads are on the horizon.
