Hello dears!  I don't know what it is about the start of every season that inspires me to get into the kitchen.  If you are a long time follower you might already know that the kitchen and I are not close friends.  But I was motivated by a recipe I saw in this month's Redbook.  Of course I altered it a bit since I did not have all the ingredients in my casita.
 1.  I cooked the quinoa like normal (in a steamer) or you could follow the box directions for the stove.  Use 1 cup of uncooked quinoa and 2 cups water or a veggie or chicken broth.  Your call!

2.  While I waited for the quinoa to cook I grated 2 large carrots and chopped the mint, scallions and cilantro.

3.  I added some lime juice and a dash of orange juice.  Lastly I seasoned it with salt and pepper and TADA!

4.  I know I could eat a bowl of this and be happy but I picked up some inexpensive pork and had B help me cook it so we could pair it with the quinoa.

Since I am a newlywed and all ;) I had to step up my game and do my one dish a season, so here you have it!   And not to toot my own horn but it was pretty good.  I love how the colors are kind of fallish but this dish is perfect for any season and it is HEALTHY!  Oh and two more perks are that it took about 20 minutes to prepare and it was cheap ~
